Kadak Seekh Kabab

INGREDIENTS:
1. 400 gm fine minced Lamb
2. 2 tsp Salt;
3. 10 gm Garlic
4. 1 tsp Black Pepper; (coarsely ground)
5. 25 gm Ginger
6. 2 tsp Garam Masala powder; (30 g)
7. 5 Whole red chilies
8. 30 ml Oil; for frying;
9. some freshly squeezed lemon


HOW TO MAKE IT:
1. Cut Garlic, Ginger, Red Chilies into small pieces.


2. Mix the minced lamb with garlic, red chilies, ginger, black pepper, salt and garam masala powder .  Add little amount of oil to marinade and mix it well.


3. Let the mix stand for 2 hrs to marinated well.


4. Make large lemon sized balls of the meat and put them onto skewers (sheekh) in cylindrical shape. Cook in a clay oven until brown and done.


5. Remove the skewers from the oven and cut them in the kababs. Gently slide them off the skewers.


6. Heat oil in a pan and shallow fry the kababs untill browned.


7.Season kababs with lemon juice, salt and chaat masala. Serve warm with greens, onions slices and coriander/mint chatney(paste).
